London Vegan Bird Food: Chocolate Chip Blondies


Taken from a  recipe by The Blonde Health (, these Vegan Chocolate Chip Blondies are believe it or not made with Chickpeas making them a much healthier option when you want to reach for that sweet treat.  I was apprehensive at first too but gave it a go, and oh my, what a result.  You do not taste the chickpeas at all, they just add a great texture.


1 can of Chickpeas – make sure they are drained, rinsed and dry

1/4 cup Peanut butter

 1/4 cup Oats or Oat Flour

1/2 cup Dark Chocolate Chips

 1 tsp Baking Powder

 1 tbsp Vanilla Extract

 3/4 cup Sweetener  (I used Truvia but this meant I only needed 1/2 Cup)

100ml non dairy milk (e.g. unsweetened almond milk)


Put all of the ingredients apart from the milk and chocolate chips in a blender/food processor and combine. Then slowly add the milk until the mixture is thick and creamy (you may not need all of the milk). Stir in the chocolate chips. Pour into a lined tin and bake at 180c/350f for 15-20 minutes. Leave them to cool and set before slicing into squares.
