London Vegan Bird Food: Avocado and Sun Dried Tomato Sandwich

Barely worth doing a ‘recipe’ here but as my boyfriend said this was the best sandwich he had ever had (!!), I thought I would share this with you.

Ingredients (Makes 1 sandwich)

1 Ripe Avocado

1/2 Lime

3 Sun Dried Tomatoes sliced

1 Wholemeal Pitta Bread

Salt and Pepper

Directions

Cut the avocado in half. Remove seed. Scoop out avocado from the peel and transfer into a bowl.

Mash with fork, then squeeze over lime and add salt and pepper to taste.

Put Pitta in Toaster until warned but not crispy.  Cut in half and smooth over avocado. Place sliced sun dried tomatoes on top and then close sandwich.

Place under grill for approx 2-3 minutes each side or just enough to crisp slightly.
