Recipe Time: Vegan Fry-up

Well it’s not really a recipe, just an arrangement of small dishes really but here’s how to do a most satisfying full English fry up without the never necessary meat element.

Tofu scramble – I call myself a vegan and I had never before attempted a Tofu scramble. Shameful. And it wasn’t half bad. I added sliced mushrooms and onions. Here’s the recipe I followed from the very wonderful Post Punk Kitchen. I love the fact that you can make so many different variations. Veggie sausages – the favourites in our household are Linda McCartney’s (I really wish there were more vegan friendly options in the range). Let me know what your favourite vegan sausages are as I’ve not found one to beat these yet.

Toast and Baked Beans – pretty self explanatory. If you want to go all fancy and make your own baked beans; I like this recipe: http://www.nigella.com/recipes/view/homemade-baked-beans-3611

Tomatoes, Mushroom and Onion – heat oil on low-med heat, add onions and cook for a few minutes then add sliced mushrooms and tomatoes with some mixed herbs and garlic salt.

So there you have it, a very easy vegan version of the good ol’ English cooked breakfast. Would love to know any more ideas you have to veganise this dish.

    Looks delicious! I haven’t made a tofu scramble in a long time, and this post has some interesting ideas for making one. I should try it out again soon.
